Pomegranate and Ginger Mocktail
Preparation time: 5 minutes
Cooking time: 15 minutes
1 sprig fresh mint
1 inch fresh ginger
150 ml still water
100 g sugar
4 slices of lemon
Sparkling water to fill the jug
In a small saucepan combine the sugar with the still water, add the ginger, roughly sliced, and simmer until the sugar has completely dissolved and a syrup has formed. Sieve out the ginger and set aside.
Cut the pomegranates, keeping a handful of seeds whole and set aside and juice the rest.
Mix the pomegranate juice and ginger syrup in a jug with ice and the pomegranate seeds and top with sparkling water.
Garnish with sliced lemon and fresh mint.
