Kesar Mango, Pommegranate and Passion Fruit Ice cream

5 Kesar mangos

4 tbsp of pommegranate seeds

2 passion fruit 

50g plain flour

30g margarine

15g coconut sugar

25ml soya milk 

1/2 tsp of vanilla essence 

4 scoop vanilla vegan ice cream

1/4 tsp of agar agar powder

Juice of 1/2 lime 

Toasted coconut chips dill and mint for garnish


  1. Peel and destone the 5 mango. Blend one of the mango with the agar agar and the lime juice and  set aside the mango gel in a squeeze bottle. 

  2. Cut in little cubes the rest of the mango flash and set aside. 

  3. Mix the flour with the margarine, the sugar, the milk and the vanilla. Ones smooth spread a very thin layer on a silicon sheet and bake until golden at 190ºC. It will take about 5/6 minutes depends how thick is the biscuit.

  4. Assemble you elements starting from the mango then add the pomegranate, the passion fruit, the coconut, the biscuits broken in pieces, the ice cream and garnish with mint and dill leaves. 

  5. Finally add few drops of the mango gel.
