Frangipani Fig Tart

For the crust

110 g coconut Sugar

150 g plain flour

110 g cold sunflower margarine

2 tsp vanilla essence

For the filling

30 g psyllium husks

150 g margarine

50 g coconut sugar 

150 g ground almonds 

190 ml water 

2 tsp vanilla essence 

1 tsp almond essence

5 ripe figs


  1. Pre heat the oven at 180°C.

  2. Gently mix the ingredients for the crust without melting the margarine and press into cases.

  3. For the filling, cream the margarine with the sugar until pale.

  4. Blend the psyllium husks and add to the margarine mix. Gently fold in the ground almonds, water and essences. 

  5. Fill the cases with filling and then cut the figs in half or quarters and top the tartlets.

  6. Bake for 45 minutes.

  7. Once cool, dust with icing sugar or brush with warm maple syrup.
